    Cultural Background Introduction

    Tea was the core elegant pastime of the Song literati. As a Chinese old saying goes, “Tea rose in the Tang Dynasty and flourished in the Song Dynasty”.

    The Diancha (whisked tea) technique originated in the late Tang and Five Dynasties, and became the mainstream tea-drinking custom across the whole Song Dynasty. It spawned a full set of Song tea rituals including tea contest, divided tea and tea feasts.

    Liu Songnian, a famous Southern Song painter, fully recorded the complete Diancha procedure in his masterpiece Tea Whisking Painting. The stone tea mill shown in the painting is the core tool for grinding tencha to make matcha in ancient China.

    This mill is faithfully reproduced according to the ancient Song tea utensil record Praise of Tea Sets by Elder Shenan. Its antique name is Shi Zhuanyun, also known as Zaochi, with the elegant studio title “Incense Hut Seclusion”.

    The character “Shi” means carved from natural stone; “Zhuanyun” originally referred to the ancient Song official in charge of fiscal transportation, vividly describing the circular grinding motion of the stone mill.
